Well, Happy Thanksgiving! I know, I am a little late with the turkey-day wishes, but I do subscribe to the idea that one should be thankful every day of the year, and not just especially thankful on the 4th Thursday of November.
Thanksgiving was good - lots of good food, including this awesome trifle!
And, it was even pretty healthy! Sugar-free white chocolate pudding folded into Cool Whip, layers of angel food cake (cut in squares), raspberries, blueberries, and sprinkling of almonds on top, complete with strawberry garnish! That was my favorite thing.
And I made deviled eggs, green bean casserole, and sweet potato casserole. Jordan made her own dessert too - healthy pumpkin bars (including Fiber One cereal) - they were quite tasty.
After that Jordan headed to her dad's for their Thanksgiving meal and then had a quick trip to Michigan for a step-cousin's birthday party. She's home from school today, sick! Throwing up counts as a pretty good reason for missing school. I keep thinking that she'll be able to go in to school in a little while, so that it only counts as a late day and not a complete absence. But, we'll see.
P and I went camping on Friday afternoon to Whitewater Memorial park in Indiana. The park was pretty empty, maybe just 4-5 other campers total. And, Friday and Saturday were both in the mid-60's - beautiful weather. Saturday night, it started raining and rained all night, clear into Sunday, so packing up was a little soggy. But, overall, it was a great weekend.
OK, time to do some cyber-shopping. :)
Actually, I skipped the Black Friday crowds and did my cyber-shopping late Thursday evening - it was great!
peace to you this week...
